GREEN CHILE CHICKEN ENCHILADA STUFFED SPAGHETTI SQUASH

Breakfast No Bake “Muffins”
What you need…
- 2 ripe bananas mashed up
- 1/2c melted coconut oil
- 1c rolled oats
- 2 servings of protein powder of your choice. I used a chocolate vegan protein powder that I got from Cosco 🙂
Mix well and put in muffin tin that has been well greased with coconut oil to prevent sticking. Chill and EAT!

A Fried Duck Egg Over Kimchee’d Brown Rice
Take some already cooked and chilled brown rice, about 1/2c or so. Mix about a T of mayo and a couple big scoops of kimchee into the rice. Fry that duck egg with a lil salt and put it right on top on the rice. SO GOOD.
So I’ve Been Dabbling in Some Juicing…
AND I freaking LOVE it. Let me say this first… I am not a big fan of juice cleanses (although I’m sure they have been successful for some people) and I believe in a pretty low sugar, high fiber diet (even if it is fruit). BUT this is how I think of it… I (and we ALL) need more raw food in our diets. Raw food provides tons of nutrients and enzymes that are vital for digestion and all our systems to function. When you cook food you lose all or most of these! I figure if I think of my juice as a multi vitamin, and drink it with my meal (which is full of fat and protein to help slow absorption) I can get MUCH more of these nutrients/enzymes than normally. Make sense?
Here is my fav juice blend: Beet, carrot, celery, ginger, green apple, lemon, kale… BOOM!
Shredded Green Cabbage, Yellow Peppers w/ Quinoa and Avocado
Yup, that’s pretty much it.. just add all that to a bowl and sprinkle with feta, drizzle some olive oil and apple cider vinegar. OH and add generous amounts of some good sea salt and pepper.
