My recipes are all about meals and snacks being cost effective, healthy, low prep time, and taste amazing!

SPAGHETTI SQUASH W/ ITALIAN SEASONING AND TOMATOES

What you need…

  • 1 spaghetti squash, cooked (see my last blog post on how to make perfectly cooked squash here)
  • RED plump tomatoes of your choice!  Cherry? Roma? What looks good?
  • Garlic. Duh.
  • Italian seasoning
  • Salt and pepper
  • Olive oil
  • Feta or other italian cheese is opt

What to do…

  1. Scoop out the insides of one whole spaghetti squash into a bowl
  2. Add 2-3 T olive oil, mix
  3. Add your seasonings!  I added lots of garlic but add the amt you like!
  4. Enjoy with a piece of roasted chix, or some beef or turkey meatballs?!

SUMMER SALAD W/ GRAPES, FETA AND SLIVERED ALMONDS

What you need…

  • Organic Salad mix
  • Feta (or any soft cheese you like)
  • Grapes (organic prefer)
  • Slivered almonds (taste even better if you pan fry for a few min til brown)
  • Olive oil and balsamic vin
  • I add roasted chick or ground turkey to mine!

CUCUMBER, TOMATO AND BLUE CHEESE SALAD

  • One english cuc chopped
  • 2-3 toms chopped (this will depend on size of your toms) I eye it so it’s half cucs half toms
  • 1/2 diced onion (this is optional)
  • 1/2 or so of crumbled blue cheese (optional as well for dairy seni peeps)
  • Olive oil and balsamic vin – About 2-3 T each
  • Salt and pepper of course!

BERRY COCONUT CHIA SEED PUDDING

What you need…

  • 4 c frozen berries (I use a berry mix from cosco)
  • 1c coconut oil (I use an unflavored organic kind… also from cosco, but any organic coconut oil is great! I just like a little less coconut flavor and a little more berry flavor)
  • 1/2c of chia seeds
  • Sweetener of your choice. I like a lil stevia but honey or maple syrup works too!
  • Tinsy bit of sea salt

What to do…

  1. In a sauce pan add berries and coconut oil and cook til all melted and liquid
  2. Add this to your blender with your sweetener, tinsy bit of salt and emulsify… should get kinda creamy looking
  3.  Add to a bowl or storage container bec you will have to refrigerate to harden
  4. Mix in chia seeds!
  5. Refrigerate overnight and BOOM!

Did you know that chia seeds are mini powerhouses packing more calcium than milk, more antioxidants than blueberries and more Omega-3 than Salmon?!  Yup.
